The Create New Table task is typically used to create an initial dummy table in the flow that is later replaced by a custom table. To replace a created dummy table by your custom table click on .../Paste From Clipboard. To rename the newly created table, click .../Update Table Info.
Go to Flow Gallery and Copy & Edit the Create New Table Flow for example usecases.
